The reason being that Air comes with 6 elements that can be controlled independently of one another, while the Pro has 5 that provides a heat level that is even yet static across the entire oven.

Capacity – In terms of capacity, Air offers a larger space that can fit a 9-slice toaster with room for up to a 13” Pizza, 9 x 13” baking pan, a 12-cup muffin tray, as well as a 14-pound turkey!

While Breville Pro offers a lesser capacity as it can only fit a 6-slice toaster, 13” pizza, a whole chicken, or a 9 cup muffin tray.
